There are only two editions, and the choice is simpler than the bonus list makes it look. Here is what changes, what does not, and why buying Standard first is a valid option.
Quick answer
Choose Standard if you mainly want to play the game. Choose Ultimate only if its bonus vehicles, weapons, customization and other chapter-linked items matter to you. Standard owners can buy the Ultimate upgrade later.

Best if you care about the game more than bonus items, or want to decide after playing. The later digital upgrade keeps that option open.

Reasonable if price matters more than preorder extras. Check your own account-region store instead of relying on a converted headline price.
Rockstar says the physical Standard Edition contains a code for the digital download. Retail shipping and pickup are expected to begin November 12 so the code can be redeemed for preload.
A physical Ultimate Edition is not available. Physical Standard owners can buy the Ultimate upgrade digitally after redeeming the game code.
